Neon Lettuce

Hello Glamourites,

Now that (unfortunately) summer is coming to the end, it’s time to start eating healthy again. It’s always too easy during the summer months to get off track with good eating habits as we’re busy enjoying those BBQs, margaritas, ice cream & parties. Here is a refreshing and unique salad recipe to work your way back to healthy eating; don’t forget to use fresh blackberries which are in season now. INGREDIENTS:

3 1/2 cups micro arugula

1 cup blackberries (ripe and sweet!)

2 tablespoons pine nuts

1 ear red corn, cut off the cob

1/2 bunch white asparagus

2 tablespoons extra virgin olive oil

1 tablespoon red wine vinegar

1 clove of garlic, pressed

2 tablespoons chopped caper berries (stems removed)

1 1/2 tablespoons of mint, finely chopped

sea salt

black pepper

METHOD:

– Rinse and dry microgreens.  Set aside.

– In a small mixing bowl combine olive oil, red wine vinegar, mint, garlic, chopped caper berries and a pinch of salt.  Place in refrigerator until ready to serve.

– Trim ends off of asparagus (I trimmed a good 1 1/2- 2 inches off of mine to get to the softest part).  Lightly coat spears with olive oil and cook on medium heat over a grill pan or on your grill until seared to your preference. Sprinkle lightly with sea salt and pepper.  Cut into 1/2 inch pieces.

– Assemble the salad by combining microgreens, corn, asparagus, blackberries and pine nuts in a large bowl.  Add salad dressing (recipe makes enough for some leftovers, depending on preference).  Toss well and serve immediately!

Not over yet

No, I refuse to believe that summer is over yet, because it’s NOT! Summer is my favourite season; I try and enjoy it to the fullest and for as long as possible. I love those long beach days relaxing under the hot sun and perfecting a tan; those days whenit stays light out until 10pm. These pictures capture what I feel summer is along with the fun it brings. Hello Glamourites,

Some of you have may already heard of an event called ‘Diner en blanc’ which originated 25 years ago in Paris. It is where people gather all dressed in white for a giant “chic picnic” where only the day before they have been advised of the secret location. Hundreds of people are invited and are expected to conduct themselves with the greatest decorum, elegance, and etiquette to enjoy this unique evening.

This event is held all over the world at different times and if you have a chance to attend, I would not turn it down! This all made me think of how fun it would be to hold your own “dinner en blanc” event or party (obviously not at that large scale). If you are wanting to throw a final summer party before August slips away, perhaps consider having an all white theme. My dream job would to be running an Event Planning company in any large city and putting a smile on people’s face whenever we through the perfect party or wedding!

Any of my shoes of course….specifically though I may have to say my mint ring this summer, it goes with everything!

Curled up my the fireplace in our library under a blanket and some hot chocolate, the view is of our fields and it’s incredibly peaceful.

5.) Summer, Fall, Winter or Spring?

SUMMER! Summer all the way, all the time. I absolutely love the sun and can never get enough of it, plus the fashion trends you can try in the summer are unbeatable.

6.) Who is your favourite actor/actress?

Channing Tatum, I can’t resist his looks I’m afraid. I like too how he plays lots of roles and doesn’t just stick to your classic handsome looking good guy.

7.) What is your favourite trend at the moment?

Patterns. Any type of patterns and also mixing patterns in one outfit.

8.) Candy, chocolate or veggies? 

Chocolate, hands down! I am a chocoholic and need my bit of chocolate after almost every meal.

9.) If you could travel to a place for any length of time, no cost & no plane hours where would you go?

I would have to say Europe, I have yet to travel there and always see amazing pictures of people’s visits and it makes me jealous!

10.) What’s the best part of being a blogger?

Being able to express yourself and your ideas in a way that evolves many different media (pictures, videos, text ect) and sharing them with people you may never get to otherwise.

Clever TYpE

Hello Glamourites,

Over the summer I have found some unique and different types of typography and clever ways of writing certain words. I find it interesting when you see a word look out of the ordinary but the meaning still makes sense in your brain. We use words and letters all the time and it’s fun to spice them up and view them in an offbeat way. Good Morning Glamourites,

Been a busy last few days as summer is starting to wind down and my friends are starting to leave again for the next school year. Still can’t get my head around the fact it’s already the middle of August….okay let’s not think about that now! Macarons, the little couple bites of dessert you sometimes need to satisfy your sweet tooth. I have yet to try and make any type of macarons myself but it is my mission before the summer is over to give it a shot. Raspberry macarons

Ingredients

  • 250g almond meal
  • 250g icing sugar
  • 3 (90g) egg whites, at room temperature
  • 3 (90g) egg whites, extra (at room temperature)*
  • 65mL distilled water
  • 250g caster sugar
  • 1/2 tsp freeze-dried raspberry powder or food colouring

To make the buttercream:

  • 3 egg egg whites
  • 180g caster sugar
  • 280g unsalted butter, softened and cubed
  • 2 tbsp raspberry puree

*the marked egg whites should be aged. To do this, leave whole eggs (un-cracked) at room temperature for 1 week prior to separation.

Method

  1. Place the almond meal and icing sugar in a large food processor until fine. Sift the contents into a large, stainless steel bowl.
  2. in a small bowl place the first 3 (90g) of egg whites with the freeze-dried raspberry powder/ food colouring. Whisk gently until combined.
  3. Add the egg mixture to the almond meal mixture but DO NOT stir yet.
  4. Meanwhile, place the other 3 (90g) of egg whites in the bowl of a stand mixer fitted with a whisk attachment. DO NOT whisk yet.
  5. Place the caster sugar and distilled water in a medium saucepan over medium heat and boil until it reached 110C on the thermometer.
  6. When the syrup reaches 110C, start whisking the egg whites on medium speed until they form stiff peaks.
  7. Continue cooking the syrup until it reads 118C.
  8. Pour the syrup into the egg whites (in a thin stream) while still whisking the eggs over high speed.
  9. Beat the egg whites/syrup mixture until it reads 50C.
  10. Fold the meringue into the almond meal mixture. To test if done, drop a teaspoonful onto a small plate, the ribbon left should dis-appear within 30 seconds.
  11. Pipe the mixture amongst 5 trays lined with baking paper.
  12. Leave at room temperature until a thin skin forms on the tops of the macarons. To test, touch the macaron, the mixture should not stick onto your finger.
  13. Bake in a pre-heated oven at 180C for 20-25 minutes. Cool.

To make the buttercream:

  1. Place the egg whites and sugar over a pot of simmering water, whisking constantly until it is hot to the touch.
  2. Remove from the pot and whisk, with an electric mixer until it forms stiff peaks.
  3. Add in the butter, 1 tbsp at a time, whisking in between each addition.
  4. Fold in the puree.

To assemble, pipe 1 tsp of buttercream onto a macaron and top with another.
Store in a refrigerator (in a air-tight container) for up to 1 month.

It’s easy to become accustomed to the everyday things in life and soon we stop noticing their beauty. A good example of this would be stairs; a necessary object that helps us in most day to day activities to get to places. Here are some fabulous staircases that I think deserve to have some sincere recognition. Notice the detailing and thought behind the creation of these amazing stairs.

Make it Unique

Hello Glamourites,

It has been a busy, busy week as I have been volunteering at a kid’s camp – lots of fun but very tiring. I am home now and ready to get back to writing some posts! I know people are always trying to come up with the next big trend or most unique aspect to their wedding. Hello Glamourites,

Since August has hit I have realized I haven’t been totally watching how “healthy” I have been eating. It is just TOO tempting to eat all these yummy, greasy, sweet and juicy foods that aren’t necessarily good for you, unfortunately. Obviously my will power hasn’t been strong enough and hey, it’s summer, why not enjoy the delicious things in life! If you are wanting to have something that is tasty but will make you feel better about what you are eating try this smoothie. Blueberry Banana Smoothie

Ingredients

  • ½ of a frozen banana, cut into chunks
  • ½ cup of frozen blueberries
  • ¼ cup of nonfat Greek yogurt
  • ½ scoop (about 2 tablespoons) of sugar-free vanilla protein powder
  • ½ cup of nonfat milk

Instructions

  1. Place banana and blueberries in a blender and allow to thaw about 5-10 minutes.
  2. Add the remaining ingredients to the blender and blend until smooth and creamy.
  3. If it’s too thick to blend easily, add a little extra milk, about a tablespoon at a time.
  4. Serve immediately.
