I hope you are all having a fabulous weekend and enjoying the sunshine before we all get back into that real life routine! boo. A few days ago I decided to make some cookies, but since my sister has been recently diagnosed with many allergies, I altered the recipe so that she could eat them as well! They are dairy free, gluten free and sugar free cookies AND they taste delicious!

Chocolate Chip Quinoa and Oat Cookies

  • Servings: 12 Cookies

Ingredients

  • Coconut Oil                                       1/3 Cup
  • Coconut Sugar                                  1/2 Cup
  • Egg                                                      1
  • Vanilla                                                1 Teaspoon
  • Oat Flour                                           1 + 1/4 Cup
  • Salt                                                     1/2 Teaspoon
  • Baking Soda                                     1/2 Teaspoon
  • Oats                                                    1 Cup
  • Cooked Quinoa                                1/2 Cup
  • Unsweetened Chocolate Chips     1/2 Cup

In a bowl or mixer combine coconut oil and sugar; beat in egg and vanilla. Whisk together flour, baking soda and salt and stir into butter mixture. Add in oats and quinoa; stir in chocolate chips. Drop 1 heaping tbsp dough onto parchment paper and flatten with spoon or fork. Cook at 350 degrees for 10 minutes or once cookies have reached a golden colour!

Make Easter Easy!

I hope everyone has been enjoying the first two weeks of spring and been getting some warmer weather to enjoy. If you are hosting an Easter dinner or brunch you can get creative with your place cards and add them to cute mini easter baskets like these with some chocolate eggs.

For a centrepiece take two sizes of vases and between the two add easter eggs, jellybeans, chocolate eggs or anything colourful  to add to the easter theme!

Cookie Update

Hello Glamourites! I thought I would give you an update on my little cookie stand I have set up on the trail beside my house. It has been out there every afternoon for over a week now and I think people are starting to notice it! I have been slowly making additions and trying to make it the best it can be. I’ve ordered custom cards that give my name, email and web site which gives it a little more of a professional look and I think people like to put a name to something. I would love to start doing individual orders for customers for parties; I plan to expand beyond cookies to include cupcakes and cakes! You never know where something may lead, go give it a try. Cookie Stand

Hello Glamourites,

Today I decided to do something with my spare time as I have yet to be hired for a summer job….I hate applying for jobs! Anyways, I put my baking skills to a use and put them out for sale outside my house. We live on a trail and have many people walking, biking and running by which allows for some possible customers! I documented with photographs prepping my little stand and making labels for my cookies. If you did come by and buy some of my cookies, thank you and I hope you come back again! V Day Countdown

Hello Glamourites,

I can’t believe it’s the last day of January today! It feels like just last week we were celebrating the Christmas holidays and only yesterday that school started. Before you know it Valentine’s Day will be here! Which means now is the time to start planning and sending out invitations for your V-day Party. Valentine’s Day is one of my favourite “holidays” – besides showing your family, friends and loved ones how much you care about them, you have an excuse to eat chocolate all day! Anytime I am able to have a themed dinner or party I jump on it. That Hump Day Treat

Hello Glamourites,

Seeing as it is hump day it seems only right to bake yourself up a little something yummy with chocolate! This recipe I found through a blog called Just A Taste , which they have many delicious food inspiration and a helpful search index. Pecans are probably one of my favourite nuts and they work so perfectly in many baking recipes such as this, but also in cookies, granola and salads. This recipe in particular doesn’t require many crazy ingredients and is fast to prepare making it an easy dish to whip up last minute for guests. Pecan-Pie-Brownies

Slice-of-Pean-Pie-Brownies

PECAN PIE BROWNIES

yield: 16 SERVINGS

INGREDIENTS:

For the brownie batter:
4 large eggs
1 1/4 cups baking cocoa
1 teaspoon salt
1 teaspoon baking powder
2 teaspoons instant coffee mixed with 2 teaspoons water
2 teaspoons vanilla extract
2 1/4 cups sugar
1 cup unsalted butter, melted
1 1/2 cups all-purpose flour

For the pecan pie topping:
1 stick (1/2 cup) unsalted butter
1 cup packed light brown sugar
1/3 cup honey
2 tablespoons heavy cream
2 cups pecans

Curled up my the fireplace in our library under a blanket and some hot chocolate, the view is of our fields and it’s incredibly peaceful.

SUMMER! Summer all the way, all the time. I absolutely love the sun and can never get enough of it, plus the fashion trends you can try in the summer are unbeatable.

Channing Tatum, I can’t resist his looks I’m afraid. I like too how he plays lots of roles and doesn’t just stick to your classic handsome looking good guy.

Patterns. Any type of patterns and also mixing patterns in one outfit.

Chocolate, hands down! I am a chocoholic and need my bit of chocolate after almost every meal.

I would have to say Europe, I have yet to travel there and always see amazing pictures of people’s visits and it makes me jealous!

The Triple Threat

Hi all Glamourites!

I figured after all this time I should finally post some of my own pictures from an event I recently held.  I must also give my Mom a lot of the credit (food & decor purchasing) for this particular party but we work well together throwing fun gatherings for friends and family! For this evening we went with the “Triple Treat” theme being WINE, CHEESE & CHOCOLATE. How can you go wrong with that? Here are some pictures of our food table and decorations. IMG_1523I have seen this done in magazine’s and on Pinterest of course…using wine bottles as individual vases for flowers. I wanted to spray paint them but ran out of time and in the end, I like the natural uniqueness of each bottle. It also suited our “Wine,Cheese & Chocolate” theme.

DSC_0654The entrance: one of THE most important parts of an event. This is where your guests get the first impression of what they have to expect and also what will stick most in their mind. We found some adorable chocolate/dessert paintings, more books on chocolate and fun accent gift baskets to line the staircase as our guests entered the house.

There’s more than chocolate

Hello Glamourites,

I realized most of my food posts have been all chocolate or associated with dessert  and I should really broaden that and show I do like other foods. My next big thing after chocolate would probably be breads, buns, baguettes anything bread related I can’t resist! Here is a recipe I found from Carpe Season for dinner rolls which seems not too complicated for homemade buns. Enjoy and make something tasty for yourself tonight xx

Half Time Buns

(yields 30 buns)

INGREDIENTS

3 and 3/8 tsp. active dry yeast (equal to 1 1/2 [1/4-oz] packets)

1/4 + 1/8 c. warm water*

1/2 c. vegetable shortening, melted

1 1/8 c. milk scalded**

3/4 c. cold water

1/2 tbsp. salt

3 eggs

6 c. all purpose flour

**To scald milk, place milk in a a heavy-bottomed sauce pan over medium heat. Stirring almost continually, heat until it begins to froth around the edges and then remove from heat.

INSTRUCTIONS

1. In a small bowl, dissolve the yeast in the warm water by stirring slightly. You are looking for the mixture to bubble and froth a bit (that’s how you know your yeast is ready for action; if this doesn’t happen, start over. Your water may have been too hot or cold). Set mixture aside.

2. In a large bowl, mix melted shortening and sugar. Add scaled milk and cold water; let sit until it is lukewarm, then add yeast mixture. Add 2 c. of flour, beating well with a mixer. Then thoroughly beat in the eggs. At this point, ditch the mixer for a wooden spoon, and stir in the remaining flour. I found that to get the flour incorporated, I had to turn out the dough onto a lightly floured surface and knead it a bit, using a little more flour to keep it from sticking to my hands. The dough will feel wetter and sticker and thicker than you think it should, but press on!

3. Heat oven to 200*. Turn oven off after it reaches this heat.

4. Once the flour is totally incorporated, spray your bowl with cooking spray and spread it around the bowl with a paper towel. Shape dough into a rough ball and return to your lightly greased bowl. Cover with a flour-sprinkled towel.

5. Place covered dough bowl into your heated oven. (which has been turned off)

6. Let it rise until doubled. Punch it down with oiled hands. Form dough into buns (sized bigger than a golf ball, smaller than a tennis ball) and place buns onto greased baking sheets. Cover with floured towels and let rise again until doubled (heat oven again to 200*, offed it, and let the buns rise again in the warm oven; allow for 30-45 minutes).

7. If using your oven to let the buns rise, remove from oven and preheat oven to 350*.

8. Bake buns for 12-15 minutes until golden brown.

9. If serving immediately, brush tops with butter. If saving or !freezing!, save this step until ready to serve.

Topping options: butter! cinnamon-sugar! brown-sugar! garlic salt!
